Recipe type: Roux
Roux brun for béchamel sauce and veloutés.
- 4 tbsp. butter
- 4 tbsp. flour
- Melt 4 tbsp. butter in a saucepan and mix into it 4 tbsp. flour.
- Cook for 15 minutes until brown.
- Another method is to brown the flour in the oven very slowly until brown before mixing it into the butter.
