Sauce Beurre Blanc

- 4 tbsp. shallots, finely chopped
- 1 cup white vinegar
- salt, white pepper
- 1 cup (225 gr.) butter, en pomade (soft)
- Boil the vinegar with the shallots until reduced to 1 tablespoon.
- Add salt and pepper and the butter, bit by bit, beating constantly over the lowest fire.
